Sedano’s and Publix Supermarkets Come Together for a Two Ingredient Frozen Treat

What I love about Orlando is the blend of cultures as experienced through food. For a unique, easy, crunchy, spicy, sweet, and cooling treat, I developed this two ingredient pot luck favorite. Take softened Sedano’s Mamey ice cream and spread between two Publix brand ginger snaps. The Publix brand has enough kick to stand up to the mellow mamey flavor. Wrap each one of these not so ordinary ice cream sandwiches in foil and freeze overnight.

I find approximately 9 x 11 inch aluminum sheets cut in half are the perfect size. Three boxes of Publix ginger snaps will be needed for each container of ice cream. Transport in a small cooler for approximately 90 one treat servings.

Mix left over softened ice cream with crumbs and broken cookies right in the ice cream container and place back in the freezer for an instant family time dessert. This is easy enough to have your children help.

With or Without Pancakes

My new favorite combination of flavors is Pyrue Chocolate Syrup and fresh blackberries. These two flavors are so delicious together and have even higher fiber and lower carbohydrate; this makes skipping the pancakes possible.

Want a snack that has less fat, carbohydrates, and calories than air popped popcorn with more potassium, more protein, and a touch of calcium?  Plus, all you need to prepare it is an oven, oven mitts, and a pan.  No air popper or microwave needed.

You might have to order it on line, if you do not have an Indian grocery store near you, but it will be worth it.  If you research this food item on line for it’s health benefits with few warnings as compared to popcorn, you will be sold.  Also, all you need is an oven to prepare it.  Simply cover a dry pan, like a stainless steel cake pan, with a single layer. and put into an oven.  Turn the dial to 475 degrees Fahrenheit.  As soon as you oven reaches this temperature, and not a second later, turn the oven off.  Then set your kitchen timer to 6 minutes.  After the timer rings, remove pan from oven using oven mitts, pour into a bowl, and enjoy the crunch!  It tastes similar to puffed cereal, even though it’s a dried seed.

I would NOT recommend frying the seeds in a skillet with oil or butter.  These seeds soak up oil better than a kitchen sponge.  You will loose the health benefits, if you prepare them this way.

I developed a taste for these seeds by placing them hot from the oven in a paper bag, spraying it with two pumps of ghee/oil and adding a bit of salt and seasonings.  Then vigorously shaking the bag.  After a few times, I no longer craved the fat or salt.  The crunch will vanish in minutes, so you need to eat it all right after it is cool enough to enjoy.  Fast, simple, plain, and crunchy works for me now.

Every time I enjoy this crunchy and healthy treat, I remember a line from the old TV show The Dinosaurs, when the character Charlene says, “Sometimes, I just want to bite something!”
